Welcoming Baby Boys with Brunch




As a mom of 3 boys, my life is all boys. There are days I wonder why they have to wrestle all the time, in the middle of the grocery store. I listen to long discourses on legos, Star Wars, and Indiana Jones and it is a good thing I am not squeamish around bugs, snakes, and toads. Can I call myself an expert on boys yet?

Two friends are expecting their first boys in a month - with identical due dates! Sounds like a good excuse for a party to me, and what better theme than "Everything Boy".



So in lieu of our Sunday Dinner report this week, here is the baby boy brunch menu. There was a request for low-fat dishes, so I had fun creating low-fat dishes (save the tart and bread, which were decidedly not low fat). I didn't bother to make things gluten-free, because we had no Celiac guests, but you can adapt many of these to be gluten-free. If you want ideas on how to do that, leave a comment.



"Real Men Eat Quiche" 
Low-Fat Souffle Quiche with Sun Dried Tomatoes and Feta

Low-fat Devils Food Cake with Italian Meringue and Cream Cheese Frostings

Note: I made these cupcakes using my standard black magic cake adaptation. I subbed out half of the oil for pureed banana, egg beaters for the eggs (1/2 cup total), and only used a T of mesquite flour. Frosting is just 6 oz. low-fat cream cheese with 1 cup powdered sugar and the seeds of a 1/2 vanilla bean.
